As a Family Photographer, I was busy with sessions, and I knew I wasn’t going to be home in time to cook dinner for my family. Thanks to Home Chef, I was able to have my kids make dinner last night! It’s truly that easy, and one thing I love the most is that they got to get in the kitchen and prepare a delicious meal for our family to enjoy.
I’ve raved about Home Chef many times, but I can’t get over how easy it makes things for me. And now I can say US because the kids have been able to dive in and help. My kids are a little bit older, so if you have younger kiddos, definitely be sure you’re supervising them in the kitchen, but having them help with dinner is such a great task for them. They’ll learn life-long lessons, you will get someone on one time with them, and they’ll also get a chance to see how much you truly do for the family each and every day. It’s a win-win for everyone!
I loved this meal! I’ll admit, it’s partially because I didn’t have to make it, partially because there was no mess to clean up afterward, and partially because it was delicious! Regardless, it was a win, and we will be doing it again.
BBQ Pork Tacos with Chipotle Ranch Slaw and Crispy Onions
Microwave Instructions
Thoroughly rinse any fresh produce and pat dry.
Combine diced peppers and corn in the provided tray. Cover tray with a damp paper towel. Microwave until peppers have softened, 3-4 minutes.
Carefully remove the tray from the microwave. Drain pulled pork and separate pieces. Stir pork into the tray, then spread into an even layer.
Cover tray again with a damp paper towel. Microwave until pork is heated through, 2-4 minutes.
Carefully remove the tray from the microwave. Stir in BBQ sauce, then rest for 3 minutes.
While meal rests, stem cilantro and tear leaves. Combine slaw and dressing (to taste) in a mixing bowl. Wrap tortillas in a damp paper towel and microwave until warmed, 30-60 seconds. If tortillas come folded, keep folded.
To serve, place pulled pork mixture in tortillas and top with cheese, slaw (to taste), crispy onions, and torn cilantro leaves.
Oven Instructions
Turn oven on to 375 degrees. Let preheat, for at least 10 minutes. Thoroughly rinse any fresh produce and pat dry.
Combine diced peppers and corn in the provided tray. Cover tray with foil and place on a baking sheet. Bake covered in a hot oven until peppers have softened, 14-18 minutes.
Carefully remove the tray from the oven. Drain pulled pork and separate pieces. Stir pork into the tray, then spread into an even layer.
Cover tray again with foil and place on a baking sheet. Bake covered in a hot oven until pork is heated through, 10-13 minutes.
Carefully remove the tray from the oven. Stir in BBQ sauce, then rest for 3 minutes.
